Equipment

  • 1 Rice Cooker
  • 1 Frying Pan

Ingredients
  

Broken Rice

  • 1 cups broken rice
  • 1 cups water

Pork chops and marinade

  • 2 large pork chops
  • 2 tbsp vegetable oil
  • 4 cloves garlic crushed
  • 2 stalks spring onions white part
  • 2 tsp chicken powder
  • 3 tbsp fish sauce
  • 3 tbsp sugar
  • 3 tbsp soy sauce

Dipping sauce

  • 0.25 cup fish sauce
  • 0.25 cup lime juice
  • 0.25 cup sugar
  • 0.3 cup warm water
  • 2 cloves garlic crushed
  • 1 chili deseeded and finely chopped

Pickled Vegetables

  • 1 cup carrot julienned
  • 1 cup daikon julienned
  • 1/4 cup sugar
  • 1/4 cup white vinegar
  • 1/2 cup warm water

Garnish

  • 1 tomato
  • 1 Cucumber
  • 2 spring onions green part

Eggs

  • 2 Eggs

Instructions
 

Pickled Vegetables

  • In a bowl, dissolve the sugar with the warm water and white vinegar then add the carrots and daikon.
  • Place into a plastic or non-reactive container, and leave in the fridge for 24 hours.

Marinade Pork Chops

  • In a large bowl, mix oil, garlic, chicken powder, garlic, spring onion, fish sauce, sugar, and soy sauce
  • Add pork chops, mix well and leave for a minimum of 30 minutes, preferably a few hours.

Make Dipping sauce

  • Dissolve sugar with a splash of warm water
  • Add to remaining ingredients and stir thoroughly
  • Taste and adjust any of the ingredients to your liking

Cook the broken rice

    Cooking broken rice using a Rice Cooker

    • Wash then soak the broken rice for one hour
    • Add the broken rice and 1 cups of water to the rice cooker
    • Cook rice as per the rice cooker instructions
    • Add cooked rice to a small rice bowl, slightly compress, then turn upside down onto a plate

    Cooking broken rice using the Stove Top

    • Wash then soak the broken rice for one hour
    • Add rice and water into a pot and bring to a boil
    • Stir the rice, cover it with a a lid, turn it down to the lowest setting, and cook for 15 minutes
    • Once the broken rice has cooked, turn off the heat and let sit for five minutes
    • Add to a small rice bowl, slightly compress, then turn upside down onto a plate

    Grill pork chops

    • Fry in a pan, grill over hot coals, or barbecue until cooked. Rest for 5 minutes.

    Cook Egg

    • If you are having a fried, fry at the last moment to keep a runny yolk, as this adds richness to the dish

    Plate up

    • Add grilled pork chop, a mound of broken rice, sliced tomato and cucumber, pickled vegetables, fried egg, and any other accompianiments to a place. Sprinkle with the green spring onions
